Spring has sprung and the rhubarb is in full season! Yipee!! I love me a crisp as it’s healthier than pie, tasty and if done right, gluten-free! so have at it folks, make one today for the ones you love!


  • 2 cups fresh rhubarb, washed and diced
  • 2 cups strawberries, diced
  • 1 teaspoon of lemon zest
  • 1 tablespoon of lemon juice
  • 5 tablespoons of maple syrup
  • 1/4 tsp salt
  • 2 tbsp. tapioca flour/starch

For the crumble:

  • 1 cup gluten free flour
  • 1 cup gluten free oats
  • 1/2 tsp cinnamon
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup coconut oil, melted
  • 1/4-1/2 cup nuts of choice (optional)


  1. Preheat oven to 350. Grease aa 8×8 pan or your 10″ cast iron pan with coconut oil.
  2. In a large bowl, combine the top 7 ingredients. Stir to combine well. Pour into your pan.
  3. In a large bowl, mix the topping ingredients till crumbly.  Pour over top the fruit in pan.
  4. Bake for 25-30 minutes till golden and bubbling. Serve with whipped cream or coconut cream for the non-dairy folks!

Chia seeds are the latest super food! They are touted to stabilize blood sugar levels, support a healthy heart, give you energy and wait for it…boost your metabolism! What are you waiting for, get on the bandwagon! I’m loving them! Here’s a recipe for a tasty, healthy and seasonal treat! Enjoy!


  • 10 oz bag of baby spinach washed
  • 1 pint of fresh local strawberries
  • 1 cup of pecans toasted (halves)
  • 130g pkg of goats’ cheese or goat’s feta crumbles
  • 2 tbsp. chia seeds
  • 1/2 cup vinegar (either apple cider or balsamic)
  • 1/4 cup olive oil
  • 2-4 tbsp. agave or maple syrup
  • 1-2 tsp of Dijon or grain mustard


  1. In your fanciest glass bowl, place the spinach, berries and pecans. Top with the crumbled goat’s cheese.
  2. For your dressing, mix the remaining ingredients and serve with the salad or toss with the salad right before service.
  3. Enjoy!

It’s strawberry season so you might as well take full advantage and use them up! This dressing would go great on a spinach salad dressed with sunflower seeds, strawberry slices, goat’s cheese and perhaps some yellow peppers! Feel free to free style with different greens, bacon, hard-boiled eggs, nuts, fruit of choice or even cheese of your choice!

This dressing is guilt-free, gluten-free and very versatile!

  • 1/2 cup olive oil
  • 1/2 cup strawberries, sliced
  • 1  teaspoon mustard or 1-2 cloves of garlic
  • chopped mint (optional)
  • 1-2  tbsp. agave or honey
  • 2  tablespoons red wine vinegar
  • Salt and pepper, to taste

  1. Puree strawberries in a blender or food processor.
  2. Add vinegar, mustard and seasonings.
  3. Blend, and then add olive oil, a bit at a time. Blend until creamy.
  4. serve with a delicious salad of your choosing!
