Seeing that it is Father’s Day weekend, I thought I’d share my homemade steak spice mix. It is easy and quick to put together and has no additives that you can’t pronounce! Go ahead, make a batch and spice up Dad’s life with a nicely seasoned steak!


  • 4 tbsp. coarse sea salt (may use less if you like)
  • 2 tbsp. ground black pepper
  • 2 tbsp. onion powder
  • 2 tbsp. onion flakes dehydrated
  • 2 tbsp. garlic powder
  • 1/2 -1 tbsp. of chili flakes (to taste)
  • 1 tbsp. thyme leaves
  • 1 tbsp. rosemary leaves or ground
  • 1/2 tbsp. coriander or dried cilantro


  1. Mix all together in a mason jar and give a good shake! Label it, you’re done!
  2. Great on steak, kebobs, chicken, pork, lamb etc! Enjoy!

I love to make up my spices in little jars, that way on any given day I can whip up a dish and know that the spices are all ready to go! When making dinner or planning one, I open my spice cabinet and think to myself “hmm what do I fee like today?” I see my Mexican spice or any other of my blends and plan from there. I know, not exactly scientific or well planned but hey that’s how I roll! Here’s an easy blend for you to whip up,  and feel free to mix it up a bit (get the pun there?), add more heat or less heat, more garlic for more tang, more chipotle for smoke etc. It’s all in what you like! Use this blend to make tacos, fajitas, burritos, etc.


  • 2 tbsp. smoked paprika
  • 1 tbsp. cumin
  • 1 tbsp. sea salt
  • 1 tbsp. dried cilantro or coriander
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne (more if you want more heat)
  • 1/2 tsp chipotle powder (more if you want more smoke)

Blend all together and store in a jar with a tight fitting lid.  Use as a ‘taco seasoning in dips, tacos, fajitas etc.


  •  1 tbsp. Paprika
  •  1 tbsp. garlic powder
  • 1 tbsp. smoked chipotle pepper
  • 1/2 tsp salt and pepper
  • 1 tsp cumin
  • Cayenne if you want them spicy, if not then omit)

Can be made into a larger batch, stored in a tightly sealed jar in the pantry! Feel free to vary the ingredients to your taste!

Let me start by saying I am not Lebanese so I don’t profess to be an expert on Lebanese food. But I can tell you that I do love the cooking! Today I was feeling like Kofta Kebobs so away I go. I have this recipe posted already but to make it easier for you, I am re-posting. It is:


  • 1/2 lb ground beef
  • 1/2 lb ground lamb
  • 4 crushed garlic cloves
  • 1/2 tbsp. sea salt
  • 3 tbsp. grated white onion
  • handful fresh parsley chopped
  • 2-3 tsp of Lebanese spice mix


  1. Shape onto kebab sticks in shape of a sausage . These may be made and refrigerated overnight till ready to cook. BBQ till cooked through.

Lebanese spice mix:

  • 1 tbsp. black pepper
  • 1 tbsp. allspice
  • 1 tbsp. cumin or cinnamon for a different flavor!
  • 1 tsp nutmeg
  • 1 tsp coriander
  • 1 tsp cloves
  • 1 tsp ginger

Mix and store in a tightly sealed jar for future use!



This spice is easy to make and os very handy to have on hand. It is great in cookies, granolas, pies, on chicken, in egg nog etc.


  • 2 tbsp cinnamon
  • 1 tbsp ginger
  • 1/2 tbsp allspice
  • 1/2 tbsp nutmeg

Mix and put in a glass jar. Store up to 6 months! Enjoy!

This spice mix is great on chicken roasted in the oven or it can be used to make fried chicken. Personally I don’t do fried chicken but I do know some people who do this. You just put a couple of tbsp of this with a couple tbsp of flour or biscuit mix, Gluten-free or not,  dip your chicken in buttermilk, shake in a plastic bag and fry away!

Here’s the mix ingredients:

  • 4 tbsp paprika
  • 1-2 tbsp salt
  • 2 tbsp pepper
  • 1 tbsp poultry seasoning
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp celery salt (be sure it has no food starch in it!)
  • 2 tbsp parsley flakes
  • 1 tbsp dry mustard

Put all the ingredients in a glass jar and shake till well blended. Store up to 6 months in cupboard.

I like to make up jars of spice mixes, then I have them on hand and ready to use on a whim! I cook on a whim, usually I will take meat out of the freezer and decide later what I am making. It’s a rare day where I know what I am actually making for dinner, sometimes I will decide as I am chopping up the veggies! so having different seasonings all ready to use, makes that easier. I don’t like the store bought versions of spice mixes as they usually have either MSG or are high in sodium. I make up my own and use what I like! So here’s one for your spice cupboard!


  • 2 tbsp paprika

  • 1 tbsp cayenne
  • 1 tbsp oregano leaves
  • 1 tbsp thyme leaves


  1. Mix all together well. Store in a glass jar for up to 6 months in cupboard.
  2. Use in rice dishes, chicken, fish, seafood dishes,pork, just about anything you like spicy! It would be great on chicken wings as well, just put a bit of this in a plastic bag with 1-2 tbsp of flour and shake…ta-da!
