For that quiche you want to make…or the butter tarts!

My Sweet Marie

I used this pastry for my tourtieres but I am sure it would work for any type of pie! Few words of caution, this is fragile pastry, go easy! Use wax paper under and over it to roll it out!


  • 1 c. rice flour
  • 1/2 c. potato starch
  • 1/2 c. tapioca starch
  • 1/4 tsp salt.
  • 6 tbsp butter or any sub according to your food tolerances
  • 1 egg beaten
  • 1 tbsp vinegar
  • 3 tbsp of ice-cold water


  1. Combine flour,starches and salt in a big bowl.
  2. Cut in the butter until crumbly.
  3. Make a well and add the egg and vinegar.
  4. Stir gently with a fork until just blended.
  5. Sprinkle with water,blend together until mixture just holds together to form a ball. If not forming well, add more fat(butter, marg,lard)
  6. Use wax paper to roll out.
