No Bake Fudgy Snow Balls

I found this recipe from www.skinnytaste.com and thought I’d give it a whirl, wow am I ever glad I did! It’s easy, no oil  or butter needed, the only sugar is 1 tbsp. of honey and the sugar in the dates, and a dusting of confectioner’s sugar for rolling them in! They are super easy but you do need a food processor. You should get 21 cookies at 69.5 calories each! Best part is there is 2.2 g of protein in them! Here’s what you need:

Ingredients:

  • 15 pitted dates
  • 1 cup whole roasted almonds
  • 2/3 cup unsweetened cocoa
  • 1 tbsp. honey or agave for vegan
  • 2 tbsp. water
  • 3 tbsp. confectioner’s sugar for rolling them

Directions:

  1. Add the almonds to your processor and pulse till ground.
  2. Add dates, cocoa, honey and water.
  3. Mix until it forms a sticky mass. If it seems too dry, add a teeny bit of water, 1 tsp at a time.
  4. Was hands and keep the tap running, scoop out 21 balls at a tbsp. each.
  5. with damp hands, roll them in your hands.
  6. Have your confectioners sugar in a bowl and roll the balls to cover them with a dusting of sugar.
  7. Store in the fridge for a week. (Like they’ll last a week!)
  8. Enjoy with a cup of tea and a good book!
