Corn Dog Bites

Here’s a little treat for you to make up for the crowds! These are kid-approved!

Ingredients:

  • gluten-free cornbread mix ( I love Bob’s Red Mill)
  • package of hot dogs that are gluten-free (cut into quarters)
  • canola oil for frying

Directions:

  1. Prepare the cornbread batter according to directions adding the milk, eggs and oil.
  2. Fill the fry pan with 1/4-1/2″ of oil, heat that up.
  3. Dip the pieces of hot dogs into the batter.
  4. Drop in the hot oil and let crispen up. Turn till all sides are cooked.
  5. Using a skewer or long toothpick, poke the dogs and serve with mustard!
  6. This batter is also great with cut veggies like onions, zucchini, mushrooms.

** I used coconut milk for mine
