Vegetable Timbale

Thsi is one of my favourite dishes lately! It is so tasty and good for you, who knew?


  • 1 large zucchini
  • 1 red onion
  • 1/2 bunch swiss chard or kale
  • 1-2 large carrots
  • 8 shiitake mushrooms
  • 4-6 oz goat’s cheese
  • 2 oz parmesan or a cheese you can tolerate


  1. Preheat the oven to 400.
  2. Using a mandoline, slice all the veggies as thinly as you can.
  3. Create layers, laying the veggies and goats cheese as you would for lasagna in a 9″ baking dish.
  4. Top with your parmesan or other cheese.
  5. Cook for 30 minutes or until cheese is golden on top!
  6. Enjoy with a chicken breast and salad, dinner is served!
