Here’s another twist on cole slaw for those summer potlucks you’ll be attending! It’s always nice to show up with something different! This would go great with grilled chicken breast with a pineapple sauce or steak teriyaki!

Ingredients:

  • 1/2 cup peanut butter
  • 1/3 cup rice vinegar
  • 2 limes juiced
  • 1 tbsp. grated ginger
  • 1 tbsp. gluten-free soy sauce or tamari
  • 1/4 shredded napa cabbage
  • carrots shredded
  • scallions and chopped peanuts for garnish

Directions:

  1. Puree the peanut butter, lime juice, rice vinegar, ginger and soy sauce.
  2. Mix the cabbage and carrots with the above dressing.
  3. Garnish with chopped peanuts and scallions.

 

Crepes go so well with a bit of whipped cream and strawberries, I thought I’d repost this one! Enjoy them also with savoury fillings like turkey and broccoli too!

Crepe Batter:

You will need:

  • 1 1/4 cups milk (any type)
  • 3 eggs
  • 2 tbsp soft butter
  • 3/4 cup flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  1. Place milk,eggs and butter in blender.
  2. Add flour,sugar and salt. Blend on high for 30 seconds. Scrape down the sides and go another 30 seconds.
  3. Refrigerate for at least 2 hours or over night.
  4. Heat a 6″ non stick fry pan brushed with butter, add 2 tbsp of batter. Swirl around the pan to cover bottom of pan.
  5. cook about 1 minute till brown, flip, cook another 30 seconds. done. repeat till batter is done!
  6. Wrap and refrigerate until needed!

 

Gluten Free Crepe Batter

You will need:

  • 1 scant cup of gluten-free flour
  • 1/4 cup sugar
  • 1/8 tsp salt
  • 1/4 tsp xantham gum
  • 2 tbsp butter soft
  • 1 3/4 cup of milk (dairy,soya,almond,rice etc)
  • 3 eggs

Prepare by same method as above. Enjoy!

It’s strawberry season so you might as well take full advantage and use them up! This dressing would go great on a spinach salad dressed with sunflower seeds, strawberry slices, goat’s cheese and perhaps some yellow peppers! Feel free to free style with different greens, bacon, hard-boiled eggs, nuts, fruit of choice or even cheese of your choice!

This dressing is guilt-free, gluten-free and very versatile!

Ingredients
  • 1/2 cup olive oil
  • 1/2 cup strawberries, sliced
  • 1  teaspoon mustard or 1-2 cloves of garlic
  • chopped mint (optional)
  • 1-2  tbsp. agave or honey
  • 2  tablespoons red wine vinegar
  • Salt and pepper, to taste

Instructions
  1. Puree strawberries in a blender or food processor.
  2. Add vinegar, mustard and seasonings.
  3. Blend, and then add olive oil, a bit at a time. Blend until creamy.
  4. serve with a delicious salad of your choosing!

Greek Style Zucchini Salad

Ingredients:
  • 1/2 pound zucchini (grated or juliened)
  • 1 tablespoon mint (chopped)
  • 1 tablespoon dill (chopped)
  • 1 green onion (sliced)
  • 1/4 cup feta (crumbled)
  • 1/2 lemon (juice and zest)
  • 1 tablespoon olive oil
  • 1 clove garlic (grated) salt and pepper to taste
Directions:
1. Mix the zucchini, mint, dill, green onions and feta in a large bowl.
2. Mix the lemon juice, zest, olive oil, garlic, salt and pepper in a small bowl.
3. Toss the salad and the dressing.
4. Chill in the fridge for several hours to overnight before serving.

Here’s a twist on cole slaw for all the potlucks you’ll be hitting this summer! Might as well make the slaw healthy as you’ll likely be indulging in other tasty treats!

Ingredients:

  • 5 cups of shredded green cabbage and kale
  • 2 shredded carrots
  • 1/2 cup sunflower seeds
  • 1/4 lemon juice (fresh)
  • 1 tbsp. Dijon mustard
  • 1 tbsp. agave
  • 1/2 tsp sea salt
  • 1/3 cup olive oil

Directions:

  1. In a large bowl toss the first 3 ingredients.
  2. Mix the dressing using the rest of ingredients.
  3. Mix all together and enjoy with a nice grilled piece of fish, a burger or anything else!

Here’s a healthy way of eating fries without the guilt! Try it, you’ll like it!

Ingredients:

  • 4 medium carrots, cut into 1/2″ sticks
  • 1 small rutabaga, also peeled and cut into 2″ sticks
  • 2-3 tbsp olive oil
  • sea salt
  • fresh ground pepper

Directions:

  1. Heat oven to 350.
  2. Toss veggies with oil,salt and pepper.
  3. roast on a baking sheet for 20-25 minutes tossing once.
  4. Be sure to lay them out flat and not stacked if you like them crispy.
  5. This makes 6-8 servings.

I don’t know about you but I love to grab a book, sit in the shade and waste time away in a good book. I could sit there for hours imagining myself in Africa, England or New York depending on the book! I put a list together of some really great reads, some of my favourites in case you’re looking for a book for this summer’s holiday!

Here they are:

  1. The Dragon Tattoo trilogy by Steig Larson – a bit dark but the story will suck you in from page 1!
  2. Fifty Shades of Grey – what can I say, I am a sucker for love stories and this one will capture you and you will not be able to put down! They are not meant for teenagers though, be warned!
  3. Cutting for Stone- Abraham Verghese – A story that has more twists and turns than Canada’s Highway!
  4. Angels in my Hair by Lorna Byrne – A true story of an Irish Lass who sees and talks to your guardian angels.
  5. Poisonwood Bible by Barbara Kingsolver – A story of a family headed to the Congo on a Baptist mission
  6. Anna Karenina by Leo Tolstoy – A classic with difficult cast to get to know but once you do, you’ll be enthralled!
  7. Kite Runner by Khaled Hosseini – A tear jerker
  8. The Red Tent by Anita Daimant – great read, interesting Bible times story.
  9. The Women’s  Murder Club Series (11 books)  James Patterson
  10. If you like James Patterson try David Baldacci’s books!

That’s my list, that should keep you busy for the summer. I’d really love some ideas from you that I may not have read!
