Cornmeal Coating Gluten-Free

You can use this coating to bread fish, chops, or chicken. I used it yesterday to coat my pickerel. It was a hit!

Ingredients:

  • 1 cup cornmeal
  • 1 cup almond flour (ground almonds)
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp thyme
  • 1/4 – 1/2 tsp cayenne pepper

Directions:

  1. Mix all the ingredients together .  Place half or some of the crumbs in a bowl big enough to dip the fish/chicken/pork, turkey or lamb in. I like to use pie plates.
  2. Have another bowl or pie plate with milk/almond milk/buttermilk or coconut milk ready to dip.
  3. soak your meat in the milk first then over to the dry crumbs.
  4. Fry the fish in a bit of olive oil on the stove till cooked. (Alternatively, can be baked in oven)
  5. Enjoy!
