Dairy-free Gluten-free Scalloped potatoes

With Easter right around the corner everyone will be serving ham and scalloped potatoes! here’s a gluten & dairy-free version for those that cannot enjoy the oozy cheesy version!


  • 5 large potatoes, peeled and thinly sliced
  • 3/4 cup chopped onion
  • 3 Tbs olive oil
  • 3 Tbsp cornstarch
  • 1 3/4 cups gluten-free chicken broth
  • 2 Tbsp mayonnaise
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • paprika
  • Dayia cheese optional


  1. In a greased 2 1/2 quart baking dish, layer potatoes and onion. )Use olive oil or coconut oil to grease your pan)
  2. In a saucepan over medium heat, heat the oil, stir in the cornstarch until smooth. Gradually add broth, mayonnaise, salt and pepper; cook and stir for 2 minutes or until thick and bubbly. Pour over potatoes. Sprinkle with paprika.
  3. Cover and bake at 325 degrees F for 2 hours or until tender.
  4. After 1 hour, sprinkle the shredded Dayia cheese if you choose to to cheese!
