Healthy Veggie Soup

This is a soup that will taste different every time I make it as I never use the same veggies twice! Feel free to change any aspect of this recipe to suit your tastes!

This is a crock pot recipe but definitely can be done on the stove! In your crock pot put the following items:

  • 1- 48 0z can of tomato juice
  • 3 cups of chicken or veg or beef broth (low sodium is best)
  • 1 onion diced
  • 1-2 rib celery diced
  • 1 small zucchini sliced or cut into triangles
  • 1/2 cauli or broccoli
  • 2 carrots, chopped however you like, I like semi circles!
  • 1 cup of green beans (fresh,frozen or canned)
  • 1 28 oz can of diced tomatoes (with/without herbs)
  • 1-2  14 oz can of beans (black bean, navy, lentil or kidney)
  • 1 tbsp thyme
  • 1 tbsp oregano
  • salt and pepper to taste


  1. Set your crock pot on high for at least 6 hours. Lower heat once boiling.
  2. Then in the last hour of cooking add in: 1 cup of dry pasta,1/2 c.rice or a diced potato if you want starch added to the soup! Turn off the crock pot once you have and let it sit with the lid on.
  3. I often make it with no carbs to keep it ‘thinner”!
  4. Ladle out and enjoy!
