Gluten-Free Biscotti

Today I made a batch of the biscottis…I used vanilla as the flavouring, dried cherries and pepitas(pumpkin seeds) and pecans as the nuts(1 cup of each)! So delish…what will you put in yours?

These Bicottis are so good and it makes a big batch. Freeze them and save for later or better yet, bag them up in gifty bags and give away as gifts!

Recipe:

Gluten Free Biscotti

Preheat oven to 350 and grease a jelly roll pan or cookie sheet with lip on all sides.

1 package gluten-free cake mix [more about flavors below]
5 eggs
¾ cup oil [or melted and cooled butter]
2 tablespoons gluten-free extracts
2 cup toasted nuts [optional]***
1 cup dried fruits [optional]***

Combine all ingredients. Pour into jelly roll pan and bake for 20 to 30 min until tests done. Remove from oven, but keep oven on. Slice cookies into thirds [the long way] and across in ½ inch slices. Remove half,  and spread out on another jelly roll pan [un-greased] and put back in oven for 3 to 10 min, until golden. Cool and store in…
