Cauliflower & Bean Dip

Another easy, healthy, gluten and dairy free recipe for you! Trust me, you’ll think you’re eating humus!

Ingredients:

  • 1 med cauliflower, washed, cut into flowerettes
  • 5 cloves of garlic, left in their skins
  • 3 tbsp olive oil
  • salt and pepper
  • 1 can canellini beans, drained and rinsed
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 cup hot water

Directions:

  1. Pre-heat oven to 375.
  2. Toss cauliflower with garlic,oil,salt and pepper. Lay out on baking sheets lined with parchment. Roast in the oven for 30 minutes or till tender. when garlic is cool enough, remove skins.
  3. In the processor, combine all of the ingredients. Process till smooth.
  4. Serve like humus with a drizzle of olive oil and crackers, nachos etc.
  5. Enjoy!!
