Creamy Cauliflower Soup

This is probably Denis’ favourite soup of all! I learned to make this soup from my mother when we owned the Stoney Point Tavern. I have made a few changes over the years but it’s basically still the same. I made it this week for Patricia and she liked it, I hope you enjoy it too!

**This recipe can be changed to any veggie, mushroom, broccoli, potato, or a combo of them all!!

Ingredients:

  • 1 tbsp of olive oil or butter
  • 1 med onion chopped
  • 1 head of cauliflower chopped (about 4 cups)
  • 2 stalks of celery washed and diced
  • 2 carrots peeled and diced
  • 8 cups of veg or chicken broth (homemade or tetra)
  • 4 cups of milk,cream or any milk you can tolerate
  • 2-3 med. potatoes diced, peeled if you choose
  • 1 tsp thyme
  • salt,pepper to taste

Directions:

  1. Sautee your onion,celery,carrots and cauliflower in the olive oil or butter till translucent.
  2. Add the broth and boil till all the veggies are well cooked. add in the potatoes and thyme now and bring to a boil once again, till taters are cooked through but not mushy. Season to taste.
  3. Now add in your milk and lower your heat. cook till heated through.
  4. At this point you can use your emulsion blender or leave it chunky, that depends on your tastes!
  5. Also, this recipe is easily adaptable to the slow cooker. Just put everything in the crock pot except the milk and potatoes. cook for a couple of hours till veggies are cooked then add the potatoes, cook them and in the last hour or two add the milk!
