Beans,Beans, The Magical Fruit

Beans,beans, the more you eat the more you toot! I try to eat beans everyday as they are so good for you. They are full of fiber and protein, they taste good and they’re heart healthy! I make them into salads, I make homemade refried beans, I make casseroles out of them and I eat them as a snack too! Here’s a few recipes for you:

Toasted Chick Peas

  • 1 can of chick peas rinsed
  • 1 tbsp olive oil
  • salt and pepper
  • hot pepper flakes if desired
  1. Rinse the beans, mix with the oil and spices, then spread on a cookie tray.
  2. Bake for about 45 minutes at 350 or till crispy!
  3. Makes a great snack, anytime of day!


Bean Salad

  • 3 cans of beans (kidney, chick, black bean or navy or lima)
  • 1 can of cut green beans or fresh beans blanched or 1 cup frozen
  • 1 small onion diced
  • 1-2 stalks of celery diced
  • 1 carrot, peeled and shredded
  • 1 cup of diced red or green pepper
  • 1/4 cup olive oil
  • 1/2 cup red vinegar
  • 3 tbsp sugar or agave or stevia(1 tsp)
  • 1/2 tsp dill (if you like)
  • salt and pepper to taste
  1. Drain and rinse all your beans.
  2. Add in all the veggies
  3. Make dressing and pour over the beans. Let sit for an hour or two to marinade! Great if made the day before a party!
