Bean Casserole

Today I was at the dentist and my hygenist was asking for bean recipes, so you may see a few new ones in the coming days!! Here’s a nice casserole that you bake but can be eaten cold too! enjoy!

Bean Casserole

  • 3 cans beans (combo of chick peas,kidney,black, lima, navy, any beans)
  • 1 can stewed or diced tomatoes
  • 1 onion sliced thin
  • 1 can or 1 pkg fresh mushrooms sliced
  • 2-4 cloves of garlic crushed
  • 1 tsp basil,oregano and thyme
  • salt and pepper to taste
  1. Blend all together in a large casserole dish.
  2. Bake in the oven for 1.5 to 2 hours at 350!
  3. Enjoy as a side dish or on it’s own!

 

Refried Beans

  • 1 onion, peeled and halved
  •   3 cups dry pinto beans, rinsed
  •  1/2 fresh jalapeno pepper, seeded and chopped
  •  2 tablespoons minced garlic
  •    5 teaspoons salt
  •   1 3/4 teaspoons fresh ground black pepper
  •   1 teaspoon ground cumin, optional
  •    9 cups water or broth
  1. Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine.  Cook on High for 8 hours, adding more water as needed.
  2.  Once the beans have cooked, strain them, and reserve the liquid.  Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.
