Chunky Salad

Growing up my parents owned the Stoney Point Tavern. It was a very popular spot and most days my mother would start her day out early, prepping salads and soups, getting the fish breaded etc. One salad that she had to make daily by the huge buckets full was Chunky Salad. We had a salad bar and this salad was always a popular one, everyone loved it. It is simple to make and with it being summer, and the fresh veggies now available, I made a batch of it yesterday! Here’s the secret recipe, sorry Mom!

Ingredients:

  • 1 seedless cucumber, chopped in chunky pieces
  • 1 small cauliflower, chunked
  • 1 onion(red,spanish or vidalia) SPT did spanish onions
  • 3 stalks of celery, chunked
  • 1 big or 2 small tomatoes, chunky or 1 pint of cherry tomatoes
  • 1 large pepper(I like red but SPT did green)
  • Golden italian dressing or a batch of homemade italian.

Dressing

  • 1/3 cup olive oil
  • 2/3 cup vinegar
  • 1 packet stevia or 2 tbsp sugar
  • 2 cloves garlic
  • 1 tsp paprika
  • 1 tsp parsley
  • 1 tsp thyme
  • salt and pepper to taste

Whisk dressing all together and pour over the veggies. Let sit for a couple of hours to marinade! Great as a side dish or all on it’s own!
