Camping Rice

When camping you have to make do with the ingredients you have! On Saturday we got some fresh perch from the local fish monger and we thought rice would be a nice accompaniment! Ok, so I had brown rice with me, what else did I have? I had onions, canned mushrooms, Anita had red pepper, celery, etc. Here’s what we did to make an awesome rice dish!


  • 2 tbsp olive oil
  • 1 onion chopped
  • 1/2 red pepper chopped
  •  1 can mushrooms or fresh would be even better
  • juice of an orange
  • 2 stalks of celery diced
  • 1/2 cup carrots diced
  • 1 cup brown rice
  • 2 cups of liquid, we had only water but broth,wine or combo of all 3 would work
  • salt,pepper or any other spice you may have or like!


  1. Start by browning the onions in olive oil.
  2. Add in any other veggies you want, mushrooms,celery,carrot, peppers.
  3. Once nicely browned, Squeeze the juice over the veggies, then add the rice and liquid.
  4. Cover and let simmer for 20-30 minutes or till all liquid evaporates. Stir once in a while.
  5. Enjoy!
