PBJ Meatballs!

Happy Canada Day All! This year we’ll be celebrating with friends, we’ll start at one house, have some nibblies and bevvies and then when we dry them out, we’ll move on to Heather and Gary’s! At our house we’ll be serving peanut butter and jelly meatballs, a mixed greens salad and for drinks we’ll serve beer, wine or popsicle martinis! Here’s my meatball recipe!


  • 2 lbs of ground meat (I did a mix of chicken and beef)
  • 1 1/4 cup of gluten-free crumbs (g.f. oats,bread,cracker)
  • 2 eggs
  • 1 tsp each- garlic,ginger and parsley
  • salt and pepper


  • 1/2 cup peanut butter(melted)
  • 1/2 cup grape jelly
  • 1/4 g.f. tamari
  • few squirts of hot sauce
  • 1 cup g.f. BBQ sauce


  1. Mix the meatball ingredients all together  by using a melon scooper to form your meatballs.
  2. Place in the bottom of the crock pot trying not to stack them.
  3. Let cook for about an hour or so on high.
  4. Make the sauce by blending all the ingredients together.
  5. Pour over the meatballs after they’ve cooked for an hour.
  6. Lower temp to low and leave for 1-2 hours.
  7. Serve as an appetizer with toothpicks or they are great with a side of rice and roasted veggies!
