Gluten-Free Cheese Buns

This is a recipe passed on to me by Carol, Mel’s mother-in-law. These buns are delicious and will be a hit for everyone, not just the non-gluten people! You can play with the ingredients too, sometimes I do spinach instead of zucch, different cheeses etc.

Directions and Ingredients:

Mix in large bowl, the following ingredients:

  • 3 cups almond flour ( or ground almonds)
  • 1 tsp baking soda
  • 1/2 tsp salt

Add and toss to dry ingredients:

  • 1 medium onion chopped fine
  • 3 oz zucchini shredded
  • 3 oz old cheddar grated ( I use Daiya cheese, gluten-free,dairy free, soya free!)

Separately whisk the wet ingredients:

  • 3 large eggs
  • 2 tbsp honey or agave
  • 1/4 c. plain yogurt ( I used goat’s yogurt)
  • 1/4 c – 1/2 c. water

Now add the wet to the dry ingredients. Drop biscuits 1″ apart on parchment paper and bake at 310 degrees, till golden. (About 20-30 minutes)
