Creamy Curry Pumpkin Soup

I was just talking with my sister on the phone and she also was making this soup today! We traded recipes and they were basically identical other than a change in spices! We both suffer dairy allergies so this is a real nice and creamy treat for us both! I hope you enjoy it as much as we do!

Ingredients:

  • 1 onion diced
  • 2 carrots peeled and diced
  • 2-3 cloves of garlic
  • 6 cups of stock/broth
  • 1 can coconut milk
  • 3 1/2 c pumpkin cooked and cubed
  • 2-3 apples peeled,cored and cubed
  • 1 tsp each of curry, cumin, thyme,parsley
  • salt and pepper to taste
  1. Sautee the onion, carrot in a bit of olive oil.
  2. Add in the garlic, broth and coconut milk.
  3. Add in the pumpkin and apple and spices.
  4. Bring to a simmer and let all cook together for a while, maybe an hour.
  5. With your immersion blender, blend the soup till smooth and creamy.
  6. Enjoy with a sprinkle of pumpkin seeds on top or a dollop of sour cream if you’re so lucky to have it!
