White Bean Spread or Dip

This is a great appetizer, low in calories!

Ingredients:

  • 2 cups of white kidney beans
  • 2 tbsp olive oil
  • 4 tbsp water or lemon juice or half of each
  • 1 tbsp fresh thyme
  • 1 clove crushed garlic
  • salt and pepper
  1. Puree in food processor all of the ingredients to a smooth texture.
  2. Serve with fresh veggies and/or crackers/rusks/bread sticks.

I make this spread and people love it. I add a little chopped fresh herbs for additional color and flavor right before serving.

Great idea on the herbs. Will try that next time!
