French Mushroom Soup

I saw a recipe recently for this and had to give it a go! I have no idea where that recipe went so I made up my own!


  • 2 lbs of mushrooms (Portobello,cremini, white) chopped
  • 1 onion sliced thin
  • 2 tbsp olive oil
  • 2 cups of red wine
  • 4 cups of chicken or beef broth or veg.
  • salt,pepper to your taste
  • thyme leaves fresh or dried
  • 4 rusks or 1 c. croutons
  • 1 cup shredded or sliced swiss cheese
  1. Brown all the mushrooms and onion in olive oil.
  2. Add red wine, simmer to a boil. Boil for 5 minutes.
  3. Add broth and spices.
  4. simmer till all veggies are tender and broth is a deep brown color.
  5. In a french onion crock, lay down a rusk(dutch bread crisp), pour soup over top, then top with 1/4 of cheese.
  6. Brown in oven for 30 minutes.
  7. Bon Appetit!
