Spinach Salad with Pecans and Dried Cherries

Ingredients:

Pecans:

  • 1 c. pecans
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tsp dijon
  • pinch salt

Mix all ingredients together, then toast at 375 for 10 minutes.

Salad:

  • 8 ounces spinach, washed and dried
  • 1/2 small red onion sliced
  • 1/2 c. sun dried cherries

Dressing:

  • 3 tbsp olive oil
  • 5 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tsp dijon
  • 1/4 tsp salt
  • 1/4 tsp pepper

Blend all together well. Mix with salad just before service.
