Monique’s Lebanese Dinner

To go with the Kebabs, Monique suggest the lentils and rice dish!  To go with it all, Fatoosh salad would be awesome. The recipe is on my blog under salads. Then you’d have a complete dinner .
Lebanese KOFTA KEBOBS
Mix together:
  • 1/2 lb ground beef
  • 1/2 lb ground lamb
  • 4 crushed garlic cloves
  • 1/2 tbsp. sea salt
  • 3 tbsp. grated white onion
  • handful fresh parsley chopped
  • 1 tsp cumin
  • 1/2 handful fresh chopped cilantro
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
Shape onto kebab sticks in shape of a sausage . These may be made and refrigerated overnight till ready to cook. BBQ till cooked through.
LEBANESE LENTILS AND RICE
Ingredients:
  • 3/4 cup rice ( I mix br. with white)
  • 3/4 cup dried brown or green lentils
  • 3 cups of water
Bring everything to a boil and simmer until water is gone.( approx 25-35 min)
While the rice mixture is cooking fry and simmer the following ingredients:
  • 2 tbsp. olive oil
  • 3 medium chopped onions
  • 3 crushed garlic cloves
    When cooked add:
    2 tsp. cumin, 3/4 tsp cinnamon, 1/2 tsp allspice
Mix both pots together. Enjoy!
