Turkey Sausage and Apple Salad

Another simple dinner for the spring/summer time or anytime! This is a big enough salad for 4-6 people, if only two of you, only toss as much as needed!


  • 1 lb of turkey sausage cooked on grill/BBQ then sliced thick on diagonal
  • 8 cups of greens (endive,escarole, spring mix, spinach or romaine or a combo of all!)
  • 1 carrot peeled and shredded
  • 1 apple sliced
  • 1/2 cup cucumber julienned
  • 1/3 cup walnuts toasted
  • 1/4 cup of red onion sliced thinly


  • 4 tbsp of olive oil
  • 6 tbsp of apple cider vinegar
  • 1 tsp of dijon mustard
  • 1 tsp honey
  • 1/4 tsp each salt and pepper


  1. Make dressing by stirring all ingredients into a jar and setting aside on counter.
  2. Prepare salad greens and veggies and place in fridge.
  3. Once meat is cooked, toss the salad with the dressing and toss with meat as well!
