Salmon with Cucumber Salad

This is a fast and easy recipe to throw together on a hot summer night!


  • 4 salmon fillets , (1-1/2 lb/750 g)
  • 1/4 cup chopped fresh chives 1/4  or green onions
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 lemon
  • Salad:
  • 1/3 cup thinly sliced red onions
  • 1/4 cup 2% plain yogurt
  • 1 tbsp lemon juice
  • 1 tsp granulated sugar
  • 1/2 tsp dried dillweed
  • 1/4 tsp salt
  • 3 cups thinly sliced cucumbers


Salad: In bowl, whisk together yogurt,onion, lemon juice, sugar, dillweed and  add cucumber.

Place salmon in microwaveable dish; sprinkle with chives, salt and pepper. (Can be grilled or poached just as easily!)Cut lemon in half lengthwise; cut crosswise into paper-thin slices and arrange over salmon. Cover and microwave at High until fish flakes easily when tested, 3 to 5 minutes. Serve with cucumber salad.
