Chicken Lemon Lentil Soup

I believe in eating healthy, wholesome, homemade foods and when I make something that is all that and good…that’s a win for me! Here’s a new recipe for you and great on a rainy day like today!

Ingredients:

  • 2 tbsp olive oil
  • chicken pieces or boneless chicken (1 LB or so)
  • 1 small or 1/2 large onion diced
  • 2-3 cloves garlic crushed
  • 1 cup red lentils or 1 can lentils
  • 1 tbsp of cumin
  • 1 tetra 900 ml of chicken broth low sodium
  • Juice of 1-2 lemons
  • fresh cilantro chopped for garnish
  • salt and pepper to taste

Directions:

  1. Sautee the chicken in olive oil till golden.
  2. Add in onion, garlic…simmer till translucent.
  3. Add in broth,lentils and cumin. cook for 30-45 minutes.
  4. Squeeze in fresh lemon juice to taste.
  5. Serve with a cilantro on top and a slice of lemon. Enjoy!

sounds yummy,have a good long weekend,I took upon myself to take my friends 10 yr old for the weekend and take care of her farm animals,5 minature horses,1 big horse,1 goatwith weird eyes,a dog,whole lot of chickens,it was pretty chaotic, then I decided to straighten her daughters dresser drawers……..helping her out isn’t helping me out,so thanks for the easy recipes………love,Colly
