Pollo Margarita (Chicken Margarita)

This is a recipe that I just thought up, in the end, it seems a bit like chicken chilli with a twist(lime, get it?) I hope you enjoy it as we have!


  • 1 lb of chicken breasts(2-3) boneless, skinless
  • juice of 2 limes
  • 2 cloves of garlic crushed
  • 2 tsp of cumin
  • 14 oz can of tomatoes diced
  • 1/2 cup salsa
  • small can of green chillies
  • 2 shots of tequilla
  • lime zest of one lime
  • 1 onion diced
  • 2 tbsp of olive oil
  • 1 can black beans
  • 1 pkg of corn bread muffin mix (for 6-8 muffins) prepared, not baked!


  1. Start off with warming your sautee pan with olive oil. throw in the chicken breast and sautee till brown on both sides.
  2. Throw in the onion and sautee till browned as well. Toss in the tequilla, lime and zest. Tear the chicken apart using two forks, shredding it.
  3. Add tomatoes,salsa and chillies, bring to a boil and cover. cook for 10-15 minutes.
  4. Add the black beans. Stir well.
  5. Pour the contents of the sautee pan into a casserole and cover with the prepared batter mix.
  6. bake at 350 for 45 minutes or till batter is browned.
  7. Serve with  a  salad and perhaps a margarita as I did!
  8. Enjoy!
