My Sweet Marie

This recipe I got from a french cookbook that was given to me as gift from a french student, Cecile, that stayed with us on exchange a few years back. She couldn’t have brought me a better gift! It’s filled with many traditional French recipes in french! I have to work my brain to cook, gotta love that!!

You need:

  • 3 tbsp olive oil
  • 2 onions diced
  • 2 garlic cloves minced
  • 2 eggplant, medium diced
  • 2 zucchini sliced
  • 2 green peppers sliced
  • 28oz can of diced tomatoes
  • 1 tsp  basil
  • 1 tsp chervil( much like italian parsley, used in french cooking often
  1. Pre-heat oven to 350 degrees.
  2. In a sautee pan add the oil, veggies and herbs. Stir fry till translucent.
  3. Pour all into a casserole and put into the oven, covered. cook for 40-45 minutes.
  4. Can be served hot or cold in warmer seasons.

  • 1 tsp parsley
