Mexican Pasta Salad

This salad is a great dish to bring to a pot luck as it’s yummy and easy to make! I’ll be bringing a huge batch of it to Jodie’s party today!

You need:

  • 900g of pasta cooked (any shape or type)
  • 1 cup of pepper diced (mix of any or all, red, green, yellow or orange)
  • 1 stalk celery diced
  • 1/2 red onion diced
  • 1 can corn or 1 cup of frozen
  • 1 can 19oz of beans (mixed, black, kidney etc)
  • Mexican Dressing as below

Mexican Dressing :

  • 3/4 cup of vinegar
  • 1/2 cup oil (olive or safflower)
  • 1 tbsp of cumin
  • 1 tbsp of dried onion minced
  • 1-2 cloves fo garlic minced
  • salt and pepper to taste
  1. Blend all dressing ingredients together and let sit while pasta cooks.
  2. Chop all veggies and throw into large mixing bowl.
  3. Open and rinse the beans and corn. Add to veggies.
  4. Once pasta is cooked, rinse with cold water and drain well.
  5. Add noodles to veggies and pour dressing over top it all.
  6. Stir well. Refrigerate till serving!

Oh that’s great. You won’t have to write this down for the friends who beg for it (and I’m sure they will). You’ve already done that. Great recipe.

That’s Greg, that was exactly my intention! How many times do youbring a dish to a party and have to write out the recipe 10 times?
