Almond Crusted Tilapia

This Friday is Good Friday and I will be having a fish fry with my family. This is one of the recipes I will serve.

You will need:

  • 1 cup flour seasoned with salt, pepper, lemon peel
  • 2 eggs mixed with 3 tbsp of water
  • 1 cup of almond flour (ground almonds, get in bulk store)
  • 8 pieces of washed fish (tilapia, pollock, haddock, halibut etc)
  1. have all three ingredients in three separate shallow dishes like pie plates.
  2. Dip fish first in flour, then egg wash and then finally in the almond blend.
  3. lay on parchment paper lined trays and bake for 30-45 minutes in a 350 oven.

Serve with lemon wedges, cole slaw and hot crisp fries!
