Easy Peas-y Chicken And Rice

This is as easy as can be!

You need:

  • 1 pkg of raw chicken pieces (legs,thighs,breasts, any pieces or a mix of them)
  • 1 cup of long grain rice
  • 2 1/2 cups of chicken broth
  • 1 cup of frozen peas or canned
  • 1 can sliced mushrooms
  • paprika, garlic powder, salt and pepper
  1. In a deep casserole that has been sprayed with veg. spray, blend the rice with the broth.
  2. Over that dump in the peas and mushrooms.
  3. lay the chicken over that and sprinkle all the pieces with any or all of the above spices.
  4. Bake for 1 hour and 15 minutes at 350 or till chicken is cooked fully and rice has absorbed all the broth.
  5. Now while this is in the oven, go to the couch and lie down and have a nap! This is an order, take it easy and let it cook, it’ll be ready before you know it! Set the timer to wake you!! Ahhh doesn’t that feel good?

Great recipes! I plan on trying the easy peas-y chicken and rice casserole and will follow to the letter the order to have a nap.
