Mom’s Lemon Cupcakes

These cupcakes bring back so many memories! When I was a little girl, I would come in after a day at school and the smell of these cupcakes would make my day! My mother worked so hard but always managed to serve us awesome meals and there was always dessert! They are easy to make and I hope you’llmake them for your loved ones!

You will need:

  • 1 white cake mix prepared to make 24 cupcakes
  • 1 pkg of lemon pudding and pie filling, prepared as per package
  • 1/2 cup of icing sugar
  1. Make the cupcakes as per the package directions. Let cool.
  2. While cupcakes are baking, prepare the lemon pie filling. Cool in fridge.
  3. Once cupcakes have cooled, cut a hole like ‘cap’ out of the top of the cupcake. Use a paring knife and cut on an angle like you would when carving out a pumpkin.
  4. Drop a tsp or so of pie filing in the hole and replace the cap!
  5.  Just before serving dust the cupcakes with icing sugar using a sifter.
