Roasted Vegetables

This recipe varies a lot in my house! I use whatever I have in the house or I buy a few things to add to what I have! Play with it and enjoy. It’s easy, healthy and yummy!!

You will need:

8 cups of vegetables in total to feed about 6-8 people, choose any of the following using many colours and textures!

  • carrots sliced, julienned or chunks
  • zucchini in chunks or large slices
  • celery
  • onion of any sort(leek, pearl, spanish, red onion or sweet onion)
  • beets
  • turnips
  • broccoli
  • cauliflower
  • green or yellow beans
  • peppers, red,yellow or orange
  • Brussel sprouts
  • salt and pepper to taste
  • 2-4 tbsp of olive oil
  1. Toss all of the vegetables in a large bowl with the salt,pepper and oil.
  2. lay out on a large baking tray or dish uncovered
  3. Bake for 1- 1 1/2 hours at 325
