Double Stuffed Potatoes

This can be modified to your liking or food allergies.

You will need:

  • 4 baking potatoes baked
  • 1/4 cup marg or butter
  • 1/2 cup of cream cheese or goat cheese spread
  • 1/2 cup milk (soya or rice milk will work too)
  • shredded cheese (cheddar, swiss or Monterey jack)
  • bacon bits
  • sour cream
  • green onions sliced
  1. Carefully scoop out the meat of the potato without breaking the shell
  2. Lay the shells on a baking tray
  3. In a large bowl, mix the potato, milk, cream cheese and cheddar
  4. Fill shells with this mix and bake for 45 minutes or till warmed at 350
  5. Serve with bacon bits, green onions and sour cream on the side.

I see no need to modify! Oh wait, I guess if I had them, I’d add green onions.
