Mom’s Banana Cake

My mother used to make this cake when we were kids and I can still remember coming home from school and the house smelling of it, oh the memories! Enjoy as I have!

You need:

  • 2 cups of flour
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 3/4 tsp salt
  • 1 1/3 up of sugar
  • 1/2 cup shortening
  • 1/2 cup sour milk or butter milk (to sour milk, add a tiny bit of vinegar to milk)
  • 1 tsp vanilla
  • 1 cup mashed bananas
  • 2 eggs
  1. Sift dry ingredients together, top 5 ingredients.
  2. Cream in shortening, then milk, vanilla, bananas. Mix well.
  3. Add eggs and beat a bit more.
  4. Pour into a 8×8 pan and bake at 350 for 25-30 minutes.
