This is one of my favourite soups. It is a recipe that takes a bit of time to prepare and cook but so worth it! It is so rare to find it in a restaurant but yet so wholesome and tasty, not to mention colorful!! If you’ve never had it, I challenge you to give it a try!

You will need:

  • 8 cups of stock (chicken or beef)
  • 1 large cooking onion, diced
  • 2 stalks of celery,diced
  • 2 cloves of garlic,minced
  • 3 large beets, peeled and diced
  • 1 large carrot, peeled and diced
  • 2 medium potatoes, peeled and diced
  • 1/2 head purple or green cabbage, shredded
  • 3-4 cups of tomato juice
  • salt and pepper
  • fresh dill and sour cream
  1. Ina large stock pot, saute the onion,carrot and celery. Add the garlic and beets. Sautee until tender.
  2. Add in the broth and tomato juice. bring to a boil.
  3. Add the cabbage, cook till tender. Add salt and pepper to taste.Once all the veggies are tender and the stew has been boiling for approx. 45 minutes, add the ptoatoes and shut off the heat. cover the soup. let sit for 20 minutes.
  4. Serve with a dollop of sour cream and a sprig of fresh dill on top!
