Crepes and gluten Free Crepes

Crepe Batter:
You will need:
- 1 1/4 cups milk (any type)
- 3 eggs
- 2 tbsp soft butter
- 3/4 cup flour
- 2 tbsp sugar
- 1/4 tsp salt
- Place milk,eggs and butter in blender.
- Add flour,sugar and salt. Blend on high for 30 seconds. Scrape down the sides and go another 30 seconds.
- Refrigerate for at least 2 hours or over night.
- Heat a 6″ non stick fry pan brushed with butter, add 2 tbsp of batter. Swirl around the pan to cover bottom of pan.
- cook about 1 minute till brown, flip, cook another 30 seconds. done. repeat till batter is done!
- Wrap and refrigerate until needed!
Gluten Free Crepe Batter
You will need:
- 1 scant cup of gluten-free flour
- 1/4 cup sugar
- 1/8 tsp salt
- 1/4 tsp xantham gum
- 2 tbsp butter soft
- 1 3/4 cup of milk (dairy,soya,almond,rice etc)
- 3 eggs
Prepare by same method as above. Enjoy!

Crepes go so well with a bit of whipped cream and strawberries, I thought I’d repost this one! Enjoy then also with savoury fillings like turkey and broccoli too!
