Wife Saver Breakfast Casserole

You will need:

  • 16 slices of bread
  • 8 slices of ham
  • 8 slices of cheese or 2 cups of shredded cheese

In a well-greased 9 x 13 casserole dish, lay down 8 slices of bread, followed by the ham and cheese then cover with the other 8 slices of bread. Now mix together the following:

  • 6 eggs
  • 1/2 tsp salt and pepper
  • 1 tsp dry mustard
  • 1/4 cup minced onion
  • 1/4 cup diced red or green pepper
  • 1 1/2 tsp of worcestire
  • 3 c. milk or milk sub.
  • dash of tabasco

Mix all those ingredients together and pour over the bread/ham/cheese.

Now blend together

  • 1/2 cup butter
  • 1/2 cup of corn flakes crushed

Sprinkle over the entire dish. This dish may be made ahead of time and placed in fridge for several hours before serving time. Bake in hot oven 350 degrees for 1 hour. Let stand for 10 minutes before cutting into it. Should get 16 servings from it or more if cut into smaller portions!

** If you want to make the night before, just keep the gg mixture separate till morning. come morning pour the egg mix over the sandwich part then the corn flakes. That way it won’t be too soggy but all prepped and ready to toss in oven!!
