Fatoosh Salad

Dressing:
- 1/4 cup fresh parsley chopped
- 1/4 cup fresh mint chopped
- 1 clove garlic
- 2 tbsp sumac powder
- 1/4 cup lemon juice
- 1/4 cup olive oil
Mix all together and let flavours meld together for a few hours if possible.
To toss the salad you need:
- Head of romaine
- half a cucumber
- 1 tomato or two if small
- 1/2 red onion sliced thin
- pita croutons (bake 3 pitas brushed with olive oil and bake till crispy, break and toss with salad when dressing is added)
Toss all together before dinner service and enjoy!
